    We have an 80' deep well that is working just fine but we have looked into the two types of sediment filter elements availabel for our whole house filter housing (W10-PR).

    One filter element is a 75 micron pre filter and a 25 micron post filter element and
    the other is a 25 micron pre filter and a 1 micron post filter element.

    This is a very substantial difference in filtration capacity. What should be sufficient for filtering sediment out of a "normal" well?

    It is hard to be precise without knowing more about your water and usage, but of the two choices I would probably go with the 75-25 it prevent clogging of the 1-micron filter.
